Deliciously soft Chocolate Chip Mini Muffins that are perfect for any occasion, from breakfast to movie nights.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chocolate chips
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Spray a mini muffin tin with nonstick cooking spray.
- Cream together the softened butter with granulated and brown sugar until smooth and creamy. Beat in the eggs one at a time, then add vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mix.
- Stir in the chocolate chips.
- Fill the mini muffin tins almost to the top. Bake for 8-10 minutes or until the edges are nicely browned.
- Cool for a few minutes in the tin before transferring to a wire rack to cool completely.
Notes
Make sure your butter is softened, and store muffins in an airtight container at room temperature for up to a week. They can also be frozen.
