Description

Deliciously soft Chocolate Chip Mini Muffins that are perfect for any occasion, from breakfast to movie nights.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Spray a mini muffin tin with nonstick cooking spray.
  3. Cream together the softened butter with granulated and brown sugar until smooth and creamy. Beat in the eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mix.
  5. Stir in the chocolate chips.
  6. Fill the mini muffin tins almost to the top. Bake for 8-10 minutes or until the edges are nicely browned.
  7. Cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

Make sure your butter is softened, and store muffins in an airtight container at room temperature for up to a week. They can also be frozen.
