Description

Ingredients

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup chocolate chips
  • 2 packages (8 ounces each) cream cheese, softened
  • 3/4 cup granulated sugar (for cheesecake)
  • 2 large eggs (for cheesecake)
  • 1 teaspoon vanilla extract (for cheesecake)
  • 1/2 cup chocolate chips (for cheesecake)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla, then mix until smooth and stir in the boiling water.
  4. Fold in the chocolate chips and divide the batter between the prepared pans. Bake for 30-35 minutes or until a toothpick comes out with a few moist crumbs. Let cool.
  5. For the cheesecake layer, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and fold in chocolate chips.
  6. Pour the cheesecake mixture over one cooled chocolate cake layer in its pan. Bake at 325°F (160°C) for 45-50 minutes or until set. Cool completely.
  7. Assemble the cake by placing one chocolate layer on a platter, adding cheesecake on top, and topping it with the second chocolate layer. Optionally, add a layer of whipped cream or a drizzle of chocolate sauce.
  8. Slice, serve, and enjoy!

Notes

For added flavor, warm water can be substituted for boiling water, though boiling helps bloom the cocoa. Leftovers can be stored in the fridge for up to three days.
