Description

This Chipotle Pineapple Jerk Glazed Ham combines spicy and sweet flavors for an unforgettable holiday feast.


Ingredients

  • 911 lb Cooked Ham (bone-in, shank or butt end)
  • 2 tsp Black Pepper
  • 23 tsp Cayenne Pepper
  • 1 tsp Allspice
  • 2 tsp Onion Powder
  • 1/2 tsp Kosher Salt
  • 2 tsp Dried Thyme
  • 2 tsp Brown Sugar
  • 2 tsp Chipotle Chili Powder
  • 1 tbsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Ground Cinnamon
  • 1/2 cup Maple Syrup (preferably pure)
  • 1/4 cup Bourbon or Rum (optional)
  • 3/4 cup Pineapple Juice
  • 2 cups Diced Pineapple (fresh preferred)
  • 12 pieces Chipotle Chiles in Adobo (finely chopped)

Instructions

  1. Allow the cooked ham to rest at room temperature for 2 hours before cooking.
  2. Preheat the oven to 325°F (163°C).
  3. In a bowl, combine the spice rub ingredients and generously rub this mixture over the ham.
  4. Cover the ham with foil and bake for 1.5 hours.
  5. While the ham bakes, combine the glaze ingredients in a saucepan, bring to a boil, and simmer until reduced by half.
  6. After 1.5 hours, increase the oven temperature to 400°F (204°C), brush the ham with the glaze, and scatter diced pineapple.
  7. Bake uncovered for another 25-30 minutes until the glaze caramelizes.
  8. Let the ham rest for 5 minutes before slicing.
