Description
This Chipotle Pineapple Jerk Glazed Ham combines spicy and sweet flavors for an unforgettable holiday feast.

- 9–11 lb Cooked Ham (bone-in, shank or butt end)
- 2 tsp Black Pepper
- 2–3 tsp Cayenne Pepper
- 1 tsp Allspice
- 2 tsp Onion Powder
- 1/2 tsp Kosher Salt
- 2 tsp Dried Thyme
- 2 tsp Brown Sugar
- 2 tsp Chipotle Chili Powder
- 1 tbsp Garlic Powder
- 1 tsp Smoked Paprika
- 1/2 tsp Ground Cinnamon
- 1/2 cup Maple Syrup (preferably pure)
- 1/4 cup Bourbon or Rum (optional)
- 3/4 cup Pineapple Juice
- 2 cups Diced Pineapple (fresh preferred)
- 1–2 pieces Chipotle Chiles in Adobo (finely chopped)
Instructions
- Allow the cooked ham to rest at room temperature for 2 hours before cooking.
- Preheat the oven to 325°F (163°C).
- In a bowl, combine the spice rub ingredients and generously rub this mixture over the ham.
- Cover the ham with foil and bake for 1.5 hours.
- While the ham bakes, combine the glaze ingredients in a saucepan, bring to a boil, and simmer until reduced by half.
- After 1.5 hours, increase the oven temperature to 400°F (204°C), brush the ham with the glaze, and scatter diced pineapple.
- Bake uncovered for another 25-30 minutes until the glaze caramelizes.
- Let the ham rest for 5 minutes before slicing.
