- 2 grilled chicken breasts, sliced
- 1 ripe avocado, sliced
- 1 tomato, sliced
- 1/2 small red onion, thinly sliced
- 1/2 cup shredded lettuce
- 2 tablespoons refried beans (per sandwich)
- 2 tablespoons chipotle mayo
- 2 slices Oaxaca cheese (or mozzarella)
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- Cut the telera rolls in half horizontally and lightly butter the insides.
- Toast the rolls on a skillet until golden.
- Spread refried beans on the bottom half of each roll and chipotle mayo on the top half.
- Layer grilled chicken slices over the beans, followed by Oaxaca cheese.
- Warm briefly on the skillet if you prefer melted cheese.
- Add sliced avocado, tomato, onion, and shredded lettuce.
- Close the sandwich with the top bun and press lightly.
