  • 3 cups shredded cheese blend (e.g., cheddar & Monterey Jack), divided
  • 1 (1 oz) packet taco seasoning (2 tbsp)
  • 1.5 cups salsa, mild or medium
  • 1 cup sour cream
  • 1 (4 oz) can diced green chiles, undrained
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup chicken broth
  • Optional Toppings: fresh cilantro (chopped), diced avocado, extra sour cream, sliced black olives, jalapeño slices, fresh lime juice

Instructions

  1. Shred cooked chicken to yield approximately 3.5 cups. In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté diced onion for 5-7 minutes until soft. Add minced garlic and cook for 1 minute until fragrant.
  2. Add shredded chicken, taco seasoning, salsa, undrained green chiles, and chicken broth to the skillet with aromatics. Stir well to combine. Bring to a gentle simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, to meld flavors.
  3. In a separate medium bowl, combine 1 cup sour cream until smooth. Cut corn tortillas into quarters or 1-inch wide strips. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  4. Arrange about one-third of the cut tortillas evenly across the bottom of the prepared baking dish. Spoon half of the chicken filling over the tortillas, spreading evenly. Drizzle half of the prepared sour cream over the chicken, then generously sprinkle one-third of the shredded cheese blend.
  5. Place another one-third of the cut tortillas over the cheese. Follow with the remaining half of the chicken filling, spreading it out. Drizzle the remaining sour cream over this chicken layer.
  6. Arrange the last one-third of the tortillas over the sour cream. Finally, crown the casserole with the remaining shredded cheese blend, ensuring an even, generous top layer.
  7. Carefully place the assembled casserole into the preheated oven. Bake for approximately 25-35 minutes, or until the casserole is hot and bubbly around the edges and the cheese on top is beautifully melted, golden brown, and slightly caramelized.
