Description
Chicken Poblano is a flavorful Mexican-inspired dish featuring tender chicken in a smoky poblano sauce. It’s a hearty, spicy meal perfect for family dinners, offering a taste of Mexico with simple ingredients and quick preparation.
Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, diced
- 2 large poblano peppers, roasted and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- Fresh cilantro for garnish
- Lime wedges for serving
- Cooked rice for serving
Instructions
- Roast the poblano peppers over an open flame or under a broiler until charred. Place in a bowl and cover with plastic wrap for 10 minutes. Once cooled, peel, seed, and chop.
- In a large skillet, heat olive oil over medium-high heat. Add diced chicken and season with salt, pepper, cumin, and smoked paprika. Cook until browned, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add chopped onion and garlic. Sauté until onions are translucent, about 3-4 minutes.
- Return the chicken to the skillet. Add the diced roasted poblano peppers, chicken broth, and heavy cream. Stir well to combine.
- Reduce heat to low and let the mixture simmer for 10-15 minutes, allowing flavors to meld and chicken to cook through. The sauce should thicken slightly.
- Taste the sauce and adjust seasoning if necessary. If you prefer extra spice, feel free to add a pinch of cayenne pepper.
- Remove from heat and serve the Chicken Poblano over cooked rice. Garnish with fresh cilantro and lime wedges.
