Description

This Chicken Parm Soup is a comforting and flavorful twist on the classic Chicken Parmesan. It combines tender chicken, tangy marinara, and gooey cheese in a heartwarming soup, perfect for any weather.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup marinara sauce
  • 1 teaspoon dried Italian herbs
  • 1 cup cooked pasta (e.g., penne or rotini)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Cut chicken breasts into small, bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add the chicken and season with salt and pepper. Cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  4. Add the chicken broth, diced tomatoes, and marinara sauce to the pot. Stir to combine.
  5. Sprinkle in the Italian herbs, and bring the mixture to a simmer. Allow to cook for about 15 minutes.
  6. Add the cooked pasta to the soup and stir well. Let it simmer for an additional 5 minutes to heat through.
  7. Remove the pot from heat and stir in shredded mozzarella and Parmesan cheese, allowing it to melt into the soup.
  8. Check for seasoning, adding more salt and pepper if needed.
  9. Ladle the soup into bowls and garnish with fresh basil if desired.
