  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Fresh parsley (for garnish)

Instructions

  1. Season both sides of the chicken breasts with salt and pepper, ensuring even flavor throughout.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook the chicken breasts for about 4-5 minutes on each side, until golden brown, then remove and set aside.
  4. Sauté the sliced mushrooms in the same skillet for about 4 minutes until lightly browned.
  5. Stir in the minced garlic and cook for an additional minute until fragrant.
  6. Add the Madeira wine to the skillet and simmer for 5 minutes.
  7. Pour in the chicken broth and season with thyme, letting it simmer for another 5 minutes.
  8. Stir in the heavy cream and return the chicken breasts to the skillet.
  9. Simmer everything together for about 10 minutes, ensuring the chicken is fully cooked.
  10. Garnish with fresh parsley before transferring everything to a serving dish.
