- 1 cup Madeira wine
- 1 cup chicken broth

- Fresh parsley (for garnish)
Instructions
- Season both sides of the chicken breasts with salt and pepper, ensuring even flavor throughout.
- Heat olive oil in a large skillet over medium heat.
- Cook the chicken breasts for about 4-5 minutes on each side, until golden brown, then remove and set aside.
- Sauté the sliced mushrooms in the same skillet for about 4 minutes until lightly browned.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the Madeira wine to the skillet and simmer for 5 minutes.
- Pour in the chicken broth and season with thyme, letting it simmer for another 5 minutes.
- Stir in the heavy cream and return the chicken breasts to the skillet.
- Simmer everything together for about 10 minutes, ensuring the chicken is fully cooked.
- Garnish with fresh parsley before transferring everything to a serving dish.
