Ingredients
- Cooked Chicken (shredded or sliced)
- Fresh Ripe Avocado
- Monterey Jack or Cheddar Cheese
- Sourdough or Whole Grain Bread
- Salt
- Pepper
- Garlic Powder (or minced garlic)
- Butter or Olive Oil (for grilling)
Instructions
- Prep the Chicken: If you haven’t done so already, shred or slice your cooked chicken into bite-sized pieces.
- Mash the Avocado: In a bowl, mash the ripe avocado with a fork. Add a sprinkle of salt, pepper, and a squeeze of lime juice (if desired).
- Assemble the Sandwich: Take two slices of your chosen bread. Spread a generous amount of the mashed avocado on one slice. Layer on the shredded chicken and top with cheese.
- Top it Off: Spread a bit more avocado on the second slice of bread and place it on top of the sandwich, avocado side down.
- Grill the Sandwich: Heat a skillet over medium heat and add a little butter or olive oil. Once hot, place the sandwich in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
- Slice and Serve: Once both sides are nicely browned and the cheese is gooey, remove the sandwich from the skillet. Let it cool for a minute, then slice it in half and serve warm.
