Description

A quick and easy Cherry Tiramisu combining creamy mascarpone cheese and fresh cherries, perfect for any occasion.


Ingredients

  • 1 pound fresh cherries (pitted and halved)
  • 1/4 cup Amaretto liqueur
  • 1 tablespoon sugar
  • 16 ladyfingers
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso (cooled)
  • Cocoa powder (for dusting)
  • Shaved dark chocolate (optional)

Instructions

  1. In a small bowl, combine the cherries, Amaretto, and sugar. Let sit to enhance flavor.
  2. In a separate bowl, whisk together mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the mascarpone mixture.
  4. Dip ladyfingers quickly into the cooled espresso, then layer them in a baking dish.
  5. Spread half the mascarpone mixture over the ladyfingers, then add half of the cherry mixture. Repeat the layers.
  6. Dust the top with cocoa powder and optional shaved dark chocolate. Cover and refrigerate for at least 4 hours.
