Description

Delightful muffins combining sweet cherries with a buttery crumb topping, perfect for breakfast or a snack.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh or frozen cherries
  • 1/2 cup all-purpose flour (for topping)
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat oven to 375°F (190°C) and prepare muffin tin.
  2. In a large bowl, whisk together 1 3/4 cups flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt.
  3. In another bowl, mix 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract until well combined.
  4. Pour wet ingredients into dry ingredients and stir gently until combined.
  5. Fold in 1 cup pitted cherries until evenly distributed.
  6. For the topping, mix 1/2 cup flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon. Add in the diced cold butter and combine until crumbly.
  7. Spoon muffin batter into prepared cups, filling about 2/3 full, and sprinkle topping evenly over the batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, consider using almond extract or experimenting with different fruits.
