- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg

- 1 cup pitted fresh or frozen cherries
- 1/2 cup all-purpose flour (for topping)
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, diced
Instructions
- Preheat oven to 375°F (190°C) and prepare muffin tin.
- In a large bowl, whisk together 1 3/4 cups flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt.
- In another bowl, mix 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract until well combined.
- Pour wet ingredients into dry ingredients and stir gently until combined.
- Fold in 1 cup pitted cherries until evenly distributed.
- For the topping, mix 1/2 cup flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon. Add in the diced cold butter and combine until crumbly.
- Spoon muffin batter into prepared cups, filling about 2/3 full, and sprinkle topping evenly over the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, consider using almond extract or experimenting with different fruits.
