Description

Delightful Cherry Cinnamon Rolls filled with sweet cherries and topped with cream cheese frosting, perfect for breakfast or a sweet snack.


Ingredients

  • 4 cups all-purpose flour (or gluten-free flour blend)
  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 1/2 teaspoon salt
  • 1 cup warm milk (dairy or non-dairy)
  • 1/4 cup unsalted butter, melted (or vegan butter)
  • 2 large eggs (or 1/4 cup unsweetened applesauce)
  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened (or vegan butter)
  • 4 oz cream cheese, softened (or vegan cream cheese)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (dairy or non-dairy)

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Allow to sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center, pour in the yeast mixture, melted butter, and eggs (or applesauce). Mix until a dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Prepare the filling: in a bowl, mix chopped cherries, brown sugar, and cinnamon. Set aside.
  6. Once dough has risen, punch it down and roll it out into a rectangle (about 16×12 inches). Spread with softened butter, then cherry filling.
  7. Roll the dough tightly from the long side to create a log. Cut into 12 slices.
  8. Place slices in a greased 9×13 inch baking pan, cover, and let rise for 30 minutes.
  9. Preheat your oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown.
  10. While the rolls bake, make the cream cheese frosting by beating together softened cream cheese, powdered sugar, vanilla, and milk until smooth.
  11. Once rolls are baked, let cool slightly and drizzle with cream cheese frosting. Serve warm or at room temperature.

Notes

Experiment with different berries for the filling. Store leftovers in an airtight container in the refrigerator for up to 3 days.
