- 9 cups Chex cereal (rice or corn variety)
- 1 cup white chocolate chips
- 1/4 cup unsalted butter
- 1/2 cup cherry gelatin mix
- 1/2 cup powdered sugar
- 1 package (35 oz) instant cheesecake pudding mix
- 1 cup dried cherries (chopped)
- 1/4 teaspoon vanilla extract (optional)
Instructions
- Prep your ingredients by measuring out all items and placing the Chex cereal into a large bowl.
- Melt the white chocolate chips and unsalted butter in a microwave-safe bowl by microwaving in 30-second intervals, stirring until smooth.
- Stir in the cherry gelatin mix and vanilla extract (if using) until fully incorporated.
- Pour the cherry-chocolate mixture over the Chex cereal and fold gently until every piece is coated evenly.
- In a zip-top bag, combine powdered sugar and cheesecake pudding mix. Add the coated cereal in batches and seal the bag, shaking until well covered.
- Spread the coated cereal onto a parchment-lined baking sheet and allow it to cool for 10 minutes. Mix in the chopped dried cherries.
Notes
Store in an airtight container at room temperature for up to a week. If using fresh ingredients, refrigerate for longer freshness.
