  • Espresso or strong brewed coffee (amount as needed)
  • Cocoa powder (for dusting)
  • Fresh cherries or chocolate shavings (for garnish)

Instructions

  1. Brew a strong cup of espresso or coffee. Once brewed, stir in 2 tablespoons of cherry extract and let it cool completely.
  2. In a mixing bowl, add 1 cup of heavy cream and whip until soft peaks form. Be careful not to over-whip; you want it to be fluffy and light.
  3. In another bowl, combine 1 cup of mascarpone cheese with 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
  4. Gently fold the whipped cream into the mascarpone mixture until just combined.
  5. Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they absorb some liquid but do not become soggy. Lay them in a single layer in a 9×9-inch dish.
  6. Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.
  7. Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone mixture on top.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  9. Once chilled, dust the top with cocoa powder and garnish with fresh cherries or chocolate shavings for a delightful finish.
