Instructions
- Brew a strong cup of espresso or coffee. Once brewed, stir in 2 tablespoons of cherry extract and let it cool completely.
- In a mixing bowl, add 1 cup of heavy cream and whip until soft peaks form. Be careful not to over-whip; you want it to be fluffy and light.
- In another bowl, combine 1 cup of mascarpone cheese with 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
- Gently fold the whipped cream into the mascarpone mixture until just combined.
- Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they absorb some liquid but do not become soggy. Lay them in a single layer in a 9×9-inch dish.
- Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.
- Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone mixture on top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
- Once chilled, dust the top with cocoa powder and garnish with fresh cherries or chocolate shavings for a delightful finish.
