- In a large pot, heat a tablespoon of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves. Sauté until the onion is translucent and fragrant, about 5 minutes.
- Stir in 28 ounces of crushed tomatoes and 4 cups of vegetable broth. Bring the mixture to a simmer, allowing the flavors to meld together.
- Add a teaspoon of Italian seasoning, salt, and pepper to taste. If you’re using fresh herbs, add them now as well. Let it simmer for about 10 minutes.
