Description

This Cheesy Roasted Cauliflower Dip is a creamy, flavorful appetizer featuring roasted cauliflower blended with garlic, cream cheese, Greek yogurt, and a blend of Parmesan and white cheddar cheeses.


Ingredients

  • 1 head cauliflower, cut into florets
  • 2 Tbsp olive oil
  • 1/4 tsp salt
  • Ground black pepper, to taste
  • 4 cloves garlic, minced
  • 4 oz cream cheese
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups grated Parmesan cheese, divided
  • 1/2 cup shredded white cheddar cheese
  • 1/4 cup green onions, chopped
  • Pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the cauliflower.
  2. In a large bowl, toss cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a foil-lined baking sheet. Roast in the oven for 25 to 30 minutes, tossing halfway through, until cauliflower is tender and golden.
  3. Remove the roasted cauliflower from the oven and transfer it to a food processor. Add minced garlic, cream cheese, Greek yogurt, 1 cup of Parmesan, white cheddar cheese, and salt. Process until the mixture is smooth and creamy. Then fold in chopped green onions and red pepper flakes for flavor.
  4. Spoon the cauliflower mixture into a small baking dish or an 8-inch skillet. Sprinkle the remaining 1/2 cup Parmesan cheese evenly over the top. Bake for about 20 minutes until the top is golden and bubbly.
  5. Remove the dip from the oven, garnish with additional green onions, and serve warm with baguette slices, crackers, or fresh veggies.
