Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds lean ground beef (80/20 recommended)
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth (low sodium preferred)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1 pound elbow macaroni (uncooked)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large pot or Dutch oven, heat 2 tbsp olive oil over medium-high heat. Add 1.5 lbs ground beef and cook, breaking it up, until browned (7-10 min). Drain excess fat. Add 1 large chopped yellow onion and cook until softened (5-7 min), scraping up any browned bits.
  2. Add 4 cloves minced garlic and cook for 1 minute until fragrant. Push beef/onion aside, add 1 (6 oz) can tomato paste to the cleared space, and cook for 2-3 minutes until darkened. Stir paste into beef mixture.
  3. Stir in 1 (28 oz) can crushed tomatoes, 1 (15 oz) can tomato sauce, 1 (14.5 oz) can undrained diced tomatoes, 4 cups beef broth, and 1 tbsp Worcestershire sauce. Season with 2 tsp Italian seasoning, 1 tsp sugar, 1 tsp salt, and 1/2 tsp black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes for flavors to deepen.
  4. Uncover and stir in 1 lb uncooked elbow macaroni, ensuring it’s fully submerged. Bring back to a gentle simmer, cover, and cook for 10-15 minutes, stirring every 2-3 minutes, until pasta is al dente. Adjust consistency with more broth/water if needed.
  5. Remove from heat. Stir in 2 cups shredded sharp cheddar cheese and 1/2 cup shredded mozzarella (optional). Cover for 2-3 minutes to melt. Stir until cheese is fully incorporated and creamy. Taste and adjust seasonings. Serve hot, garnished with fresh parsley if desired.
