A hearty, comforting casserole filled with ground beef, rice, and a rich cheesy sauce.

- 1 lb. ground beef, 85% lean
- 1.5 teaspoons Italian seasoning
- Salt and pepper to taste
- 3 Tablespoons butter, divided
- ¾ cup onions, diced
- 1 Tablespoon garlic, minced
- 2 ½ cups beef broth
- 1 ¼ cups uncooked white long grain rice
- 8 oz. sliced button mushrooms, washed
- 10.5 oz. cream of mushroom soup
- ½ cup milk, any kind
- ½ cup sour cream
- 2 cups cheddar cheese, divided
Instructions
- Preheat oven to 350°F.
- Cook the ground beef in a skillet until browned, breaking it into small pieces. Drain excess fat.
- Add Italian seasoning, salt, and pepper to the ground beef. Stir well.
- In the same skillet, add 2 tablespoons of butter, then sauté the diced onions and minced garlic until softened.
- Add sliced mushrooms and cook until they release their moisture and start to brown.
- In a large mixing bowl, combine cooked rice, beef broth, cream of mushroom soup, milk, and sour cream. Stir until well combined.
- Add the cooked ground beef mixture to the rice mixture and stir.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with cheddar cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
