- 2 large Onions
- 240 ml Buttermilk
- 125 g All-Purpose Flour
- 60 g Cornmeal
- 100 g Cheddar Cheese, shredded
- 100 g Mozzarella Cheese, shredded
- 2 large Eggs
- 1 tsp Salt
- ½ tsp Black Pepper
Instructions
- Slice the onions into 1-cm thick rings.
- Pour buttermilk over the onion rings and let soak for at least 15 minutes.
- Combine flour, salt, and pepper in a shallow dish; beat the eggs in another dish; mix cornmeal and cheeses in a third dish.
- Remove onion rings from buttermilk, then coat in flour mixture, then beaten eggs, and finally cornmeal and cheese mixture.
- Heat oil to 180°C (350°F) in a deep fryer or heavy pot.
- Drop onion rings into hot oil and fry for about 3–4 minutes until golden brown.
- Transfer fried rings to a baking sheet lined with paper towels to drain excess oil.
- Serve hot, garnished with fresh parsley if desired.
Notes
Avoid soggy rings by not overcrowding the pot while frying. Store leftover onion rings in an airtight container for up to 3 days.
