Ingredients

  • 2 large Onions
  • 240 ml Buttermilk
  • 125 g All-Purpose Flour
  • 60 g Cornmeal
  • 100 g Cheddar Cheese, shredded
  • 100 g Mozzarella Cheese, shredded
  • 2 large Eggs
  • 1 tsp Salt
  • ½ tsp Black Pepper

Instructions

  1. Slice the onions into 1-cm thick rings.
  2. Pour buttermilk over the onion rings and let soak for at least 15 minutes.
  3. Combine flour, salt, and pepper in a shallow dish; beat the eggs in another dish; mix cornmeal and cheeses in a third dish.
  4. Remove onion rings from buttermilk, then coat in flour mixture, then beaten eggs, and finally cornmeal and cheese mixture.
  5. Heat oil to 180°C (350°F) in a deep fryer or heavy pot.
  6. Drop onion rings into hot oil and fry for about 3–4 minutes until golden brown.
  7. Transfer fried rings to a baking sheet lined with paper towels to drain excess oil.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

Avoid soggy rings by not overcrowding the pot while frying. Store leftover onion rings in an airtight container for up to 3 days.
