Cheesy Broccoli Rice Chicken Casserole

Cheesy Broccoli Rice Chicken Casserole

Description

Hey there, friends! If you’re like me, you know that juggling a busy schedule can sometimes feel like a circus act—complete with juggling balls, flaming torches, and the occasional clown. Between work, family, and everything in between, finding time to whip up a delicious dinner can be a real challenge. But fear not! Our Cheesy Broccoli Rice Chicken Casserole is here to save the day!

Ingredients

Scale
  • 2 cups cooked chicken, shredded or cubed
  • 2 cups cooked rice (leftover rice is perfect!)
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1.5 cups shredded cheddar cheese (plus extra for topping, because why not?)
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: First things first—preheat your oven to 350°F (175°C). We don’t want to keep our casserole waiting!
  2. Mix it up: In a large bowl, combine the shredded chicken, cooked rice, steamed broccoli, cream of chicken soup, 1.5 cups of shredded cheddar cheese, sour cream, milk, and garlic powder. This is where the magic happens! Give it a good stir until everything is nicely blended, and season with salt and pepper to taste. Your kitchen is about to smell absolutely divine!
  3. Get it baking: Grease a 9×13-inch baking dish and transfer that cheesy mixture in there. Spread it out evenly—there’s no need for perfection here, we’re keeping it cozy, remember?
  4. Cheese it up: Pop it in the oven for about 25-30 minutes, or until it’s bubbly and golden. If you’re feeling extra indulgent, sprinkle some additional cheddar cheese on top during the last 5 minutes of baking. Because cheese, my friends, is life.
  5. Serve and enjoy: Once it’s baked to perfection, let it sit for a couple of minutes before serving. Dish it up, and watch your family dig in with smiles!

Notes

  • Leftover Love: Have some leftover rotisserie chicken? This is the perfect recipe to use it up! Just shred that beauty and throw it in.
  • Veggie Vamp: Feel free to swap in other veggies like spinach, or even throw in some peas for a pop of color. No one’s judging here—unless you skip the cheese!
  • Storage Savvy: Leftovers taste even better the next day! Store in an airtight container in the fridge for up to 3 days. Just reheat and you’re good to go!
