Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bell pepper (any color you prefer), sliced
  • 1 onion, sliced
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Coat each chicken breast evenly with the spice blend.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, cooking until soft and caramelized, about 5 minutes.
  4. Push the veggies to the sides and add the seasoned chicken breasts in the center. Cook for 3-4 minutes on each side until seared.
  5. Sprinkle the shredded cheddar cheese on top of the chicken and transfer the skillet to the oven. Bake for 20-25 minutes, or until the chicken is cooked through.
  6. Garnish with fresh cilantro if desired and serve alongside rice, tortillas, or a salad.
