- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 bell pepper (any color you prefer), sliced
- 1 onion, sliced
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Coat each chicken breast evenly with the spice blend.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, cooking until soft and caramelized, about 5 minutes.
- Push the veggies to the sides and add the seasoned chicken breasts in the center. Cook for 3-4 minutes on each side until seared.
- Sprinkle the shredded cheddar cheese on top of the chicken and transfer the skillet to the oven. Bake for 20-25 minutes, or until the chicken is cooked through.
- Garnish with fresh cilantro if desired and serve alongside rice, tortillas, or a salad.
