- 12 ounces cheese tortellini
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper (red or green), thinly sliced
- 1 pound thinly sliced beef (such as sirloin or ribeye)
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup provolone cheese, shredded
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5 minutes, or until they are softened and slightly caramelized.
- Add the sliced beef to the skillet with the vegetables. Season with Italian seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
- Lower the heat, and pour in the heavy cream. Stir to combine. Let it simmer for a couple of minutes.
- Gradually add the provolone cheese and Parmesan cheese, stirring continuously until the cheese melts and the sauce becomes creamy.
- Add the cooked tortellini to the skillet and gently toss until the tortellini is coated with the creamy sauce.
- Taste and adjust the seasoning with more salt and pepper if necessary.
- Remove from heat and garnish with chopped parsley before serving.
