Ingredients

  • 12 ounces cheese tortellini
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper (red or green), thinly sliced
  • 1 pound thinly sliced beef (such as sirloin or ribeye)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5 minutes, or until they are softened and slightly caramelized.
  3. Add the sliced beef to the skillet with the vegetables. Season with Italian seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Lower the heat, and pour in the heavy cream. Stir to combine. Let it simmer for a couple of minutes.
  5. Gradually add the provolone cheese and Parmesan cheese, stirring continuously until the cheese melts and the sauce becomes creamy.
  6. Add the cooked tortellini to the skillet and gently toss until the tortellini is coated with the creamy sauce.
  7. Taste and adjust the seasoning with more salt and pepper if necessary.
  8. Remove from heat and garnish with chopped parsley before serving.
