- 1/2 cup Greek yogurt or sour cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp lemon zest
- Pinch of salt
- Fresh fruit (strawberries, blueberries, raspberries, diced mango, kiwi, or peaches)
- Optional add-ins: mini chocolate chips, shredded coconut, or finely chopped mint
Instructions
- In a bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, lemon zest, and a pinch of salt. Beat again until fluffy. Fold in the yogurt until silky and spreadable.
- Warm a tortilla in a dry skillet for 10 to 15 seconds per side. Let it cool slightly.
- Spread a generous layer of cheesecake filling over the tortilla, leaving about 1/2 inch clear at the edges.
- Scatter fresh fruit evenly, ensuring not to pile it too high.
- Roll tightly from one side to the other, like making a burrito.
- If making pinwheels, wrap the roll in plastic and chill for 20 to 30 minutes, then slice.
- Dust with powdered sugar or drizzle with honey before serving. Serve cold.
