Description

A creamy and crunchy cauliflower salad that’s quick to prepare, perfect for family gatherings or potlucks.


Ingredients

Scale
  • 1 medium head of cauliflower, chopped into bite-sized florets
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tsp Dijon mustard
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Dice the cauliflower head into bite-sized florets.
  2. In a large pot, bring salted water to a boil. Carefully add the cauliflower florets and cook for 3-4 minutes until tender but still slightly crisp. Drain and rinse under cold water.
  3. In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, salt, and pepper until smooth.
  4. Add the cooled cauliflower, cheddar cheese, bacon, and green onions into the dressing mixture. Toss gently until well combined.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled, garnished with additional green onions if desired.
