Ingredients

  • 4 cups Shredded green cabbage
  • 2 cups Shredded purple cabbage
  • 1 cup Shredded carrots
  • 1/2 cup Fresh cilantro
  • 1/4 cup Sliced green onion
  • 1 cup Cooked edamame
  • 1 cup Roasted cashews
  • 1 cup Crunchy chow mein noodles (optional)
  • 2 cups Cooked chicken, shrimp, or other protein (optional for added protein)
  • 1/4 cup Olive oil
  • 2 tablespoons White vinegar
  • 2 tablespoons Sesame oil
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Garlic powder
  • 2 tablespoons Greek yogurt or mayo (optional)

Instructions

  1. Shake the dressing ingredients together in a jar. Combine olive oil, white vinegar, sesame oil, sugar, salt, and garlic powder. Shake well until smooth, then add Greek yogurt or mayo for creaminess, shaking again.
  2. Combine all the salad ingredients in a large bowl. Add the finely shredded green cabbage, purple cabbage, matchstick-cut carrots, fresh cilantro, sliced green onion, cooked edamame, and roasted cashews.
  3. Toss everything together gently but thoroughly. Drizzle the prepared dressing generously over the salad and mix until every component is coated in that delicious sesame flavor.
  4. Serve immediately for that refreshing crunch! For a heartier meal, include your choice of protein like chicken or shrimp.
