- 4 cups Shredded green cabbage
- 2 cups Shredded purple cabbage
- 1 cup Shredded carrots
- 1/2 cup Fresh cilantro
- 1/4 cup Sliced green onion
- 1 cup Cooked edamame
- 1 cup Roasted cashews
- 1 cup Crunchy chow mein noodles (optional)
- 2 cups Cooked chicken, shrimp, or other protein (optional for added protein)
- 1/4 cup Olive oil
- 2 tablespoons White vinegar
- 2 tablespoons Sesame oil
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
- 1/2 teaspoon Garlic powder
- 2 tablespoons Greek yogurt or mayo (optional)
Instructions
- Shake the dressing ingredients together in a jar. Combine olive oil, white vinegar, sesame oil, sugar, salt, and garlic powder. Shake well until smooth, then add Greek yogurt or mayo for creaminess, shaking again.
- Combine all the salad ingredients in a large bowl. Add the finely shredded green cabbage, purple cabbage, matchstick-cut carrots, fresh cilantro, sliced green onion, cooked edamame, and roasted cashews.
- Toss everything together gently but thoroughly. Drizzle the prepared dressing generously over the salad and mix until every component is coated in that delicious sesame flavor.
- Serve immediately for that refreshing crunch! For a heartier meal, include your choice of protein like chicken or shrimp.
