Description

This Carrot Cake Smoothie combines the flavors of a classic carrot cake into a quick and healthy drink, perfect for breakfast or a midday snack.


Ingredients

  • 1 large raw carrot, sliced or shredded
  • 1 frozen medium ripe banana
  • 1/2 cup frozen pineapple chunks
  • 3/4 cup light coconut milk
  • 1/4 cup plain Greek yogurt
  • 1/4 cup gluten-free oats
  • 1 tablespoon pecan butter or almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of nutmeg

Instructions

  1. Prep your ingredients by slicing or shredding the carrot.
  2. Add the sliced carrot, frozen banana, pineapple chunks, coconut milk, Greek yogurt, oats, nut butter, vanilla extract, cinnamon, and nutmeg into a blender.
