Description

These mobile, easily sliceable Carrot Cake Bars are your answer to all dessert dilemmas, packed with flavor and topped with a delicious cream cheese glaze.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 4 oz cream cheese, soft
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line with parchment paper.
  2. In a large bowl, combine the grated carrots, brown sugar, and granulated sugar, then mix in the oil, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually combine with the wet ingredients, folding in walnuts if using.
  4. Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, checking for doneness with a toothpick.
  5. Once baked, allow the bars to cool for about 10 minutes, then transfer to a wire rack to cool completely.
  6. Prepare the cream cheese glaze by mixing cream cheese, powdered sugar, and milk until smooth, then spread over the cooled bars.
  7. Slice into squares and serve.
