- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 4 oz cream cheese, soft
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line with parchment paper.
- In a large bowl, combine the grated carrots, brown sugar, and granulated sugar, then mix in the oil, eggs, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually combine with the wet ingredients, folding in walnuts if using.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, checking for doneness with a toothpick.
- Once baked, allow the bars to cool for about 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the cream cheese glaze by mixing cream cheese, powdered sugar, and milk until smooth, then spread over the cooled bars.
- Slice into squares and serve.
