A refreshing and vibrant Carrot Apple Salad that combines the sweetness of carrots and apples with a creamy, tangy yogurt dressing.
Ingredients

- 6 medium carrots, peeled and shredded
- 1 large apple, grated or julienned
- 1/2 cup diced celery (optional)
- 3/4 cup plain yogurt or Greek yogurt
- 1 teaspoon honey or maple syrup
- 2 tablespoons lemon juice
- 1 tablespoon chopped parsley
- Salt and pepper to taste
Instructions
- Prep your ingredients by peeling and shredding the carrots and grating or julienning the apple.
- In a small mixing bowl, whisk together yogurt, honey or maple syrup, lemon juice, and salt and pepper.
- In a large bowl, toss the shredded carrots, grated apple, and diced celery (if using), then pour the dressing over and mix well.
- Cover and refrigerate for at least 1 hour.
- When ready to serve, toss again and garnish with extra parsley or a sprinkle of seeds or nuts if desired.
Notes
Adjust the sweetness of the dressing as needed and consider chilling the apples for easier grating.
