- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- ¼ cup unsalted butter, melted
- 2 cups ricotta cheese (drained)
- 1 cup mascarpone cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional)
- ½ cup mini chocolate chips
- ¼ cup chopped pistachios (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, sugar, and cinnamon. Add the melted butter and stir everything together until the mixture is evenly combined and crumbly. Press this mixture into the bottom of a 9×9-inch square baking dish, forming a solid, compact crust. Bake the crust in the preheated oven for about 10 minutes, then remove it and allow it to cool while you prepare the filling.
- In a large mixing bowl, combine the ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and lemon zest (if using). Use a hand mixer or stand mixer to beat the mixture on medium speed until smooth and creamy. Once the mixture is well-combined, fold in the mini chocolate chips gently, saving a small amount for topping later.
- Once the crust has cooled to room temperature, spread the ricotta mixture evenly over the graham cracker crust. Smooth the top with a spatula, making sure it’s level. Sprinkle the remaining chocolate chips and chopped pistachios (if using) on top. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow the bars to set properly.
- After the Cannoli Squares have chilled, cut them into squares and serve. They’re perfect for sharing and look stunning on an Italian dessert tray.
