- 2 tablespoons water (at room temperature)
- 2 cups mascarpone cheese (at room temperature)
- 2 cups confectioners’ sugar (to sweeten)
- 1 teaspoon vanilla extract (deepens flavor)
- mini chocolate chips (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a standard cupcake pan with liners.
- In a large mixing bowl, cream the unsalted butter, sugar, and light brown sugar together for 3 to 4 minutes until fluffy.
- Add in the sour cream and pure vanilla extract, mixing well.
- Add 1 egg white to the butter mixture and blend, followed by the remaining egg whites, mixing well after each addition.
- In a separate bowl, combine the all-purpose flour, baking powder, ground cinnamon, and salt.
- Mix together the milk and water, then gradually add half of the dry mixture to the batter.
- Incorporate the milk solution, followed by the other half of the dry mixture, mixing until well combined.
- Fill cupcake liners halfway with batter and bake for 15-17 minutes until a toothpick comes out clean. Cool for 2-3 minutes in pan, then transfer to a cooling rack.
- In another bowl, beat the mascarpone cheese, confectioners’ sugar, and vanilla extract until smooth.
- Once cooled, pipe the frosting on top and sprinkle with mini chocolate chips.
