  • 1 1/4 cups all purpose flour
  • 2 teaspoons baking powder (for rise)
  • 1/4 teaspoon ground cinnamon (adds spice)
  • 1/4 teaspoon salt (balances sweetness)
  • 6 tablespoons milk (at room temperature)
  • 2 tablespoons water (at room temperature)
  • 2 cups mascarpone cheese (at room temperature)
  • 2 cups confectioners’ sugar (to sweeten)
  • 1 teaspoon vanilla extract (deepens flavor)
  • mini chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard cupcake pan with liners.
  2. In a large mixing bowl, cream the unsalted butter, sugar, and light brown sugar together for 3 to 4 minutes until fluffy.
  3. Add in the sour cream and pure vanilla extract, mixing well.
  4. Add 1 egg white to the butter mixture and blend, followed by the remaining egg whites, mixing well after each addition.
  5. In a separate bowl, combine the all-purpose flour, baking powder, ground cinnamon, and salt.
  6. Mix together the milk and water, then gradually add half of the dry mixture to the batter.
  7. Incorporate the milk solution, followed by the other half of the dry mixture, mixing until well combined.
  8. Fill cupcake liners halfway with batter and bake for 15-17 minutes until a toothpick comes out clean. Cool for 2-3 minutes in pan, then transfer to a cooling rack.
  9. In another bowl, beat the mascarpone cheese, confectioners’ sugar, and vanilla extract until smooth.
  10. Once cooled, pipe the frosting on top and sprinkle with mini chocolate chips.
