- 2 pounds russet potatoes
- 1 cup all-purpose flour
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup buttermilk
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup sliced jalapeños
- 1/4 cup chopped green onions
- 1/4 cup crumbled bacon
- Vegetable oil for frying
Instructions
- Wash and peel the russet potatoes. Cut them into thin fries, about 1/4 inch thick. Soak the fries in cold water for at least 30 minutes.
- In a large bowl, mix together the all-purpose flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Set aside any cayenne pepper for later if you prefer less heat.
- Drain and pat the fries dry with a towel.
- Dip each fry into the buttermilk, then dredge it in the flour mixture.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Fry the fries in batches for about 4-5 minutes until golden brown and crispy. Drain on paper towels.
- Transfer the crispy fries to a serving platter and sprinkle with shredded Cheddar and Monterey Jack cheeses. Broil in the oven for 2-3 minutes until cheese is melted and bubbly.
- Top your loaded fries with sliced jalapeños, chopped green onions, and crumbled bacon. Serve immediately with ranch dressing or your favorite dipping sauce!
Notes
For oven-baked fries, coat potatoes with olive oil and seasonings, then bake at 425°F (220°C) for around 30-35 minutes, flipping halfway.
