  • 4 cloves Garlic (mashed)
  • 1 cup Stelline or Orzo Pasta
  • 1 medium Butternut Squash (peeled and cubed)
  • 2 cups Fresh Spinach
  • 4 cups Chicken Broth (low-sodium if preferred)
  • 1 cup Heavy Cream or Coconut Milk (for dairy-free option)
  • 1/2 cup Parmesan Cheese (grated)

Instructions

  1. Heat a large pot over medium heat. Add the uncooked Italian sausage along with fresh thyme, crushed red pepper flakes, Italian seasoning, and ground turmeric to infuse the flavors.
  2. Brown the sausage by breaking it into small pieces with a wooden spoon. Once it’s about halfway browned, add the stelline (or orzo) pasta to toast for 1-2 minutes, stirring often, until it becomes lightly golden and fragrant.
  3. Mash the garlic and toss it into the pot, followed by the cubed butternut squash. Carefully pour in the chicken broth and stir everything to create a harmonious mixture.
  4. Bring the soup to a gentle boil, then reduce the heat to low. Cover the pot and allow it to simmer for about 10 minutes, or until the butternut squash is fork-tender.
  5. Remove the pot from heat once the squash is perfectly cooked.
  6. Add the fresh spinach, stirring it in until the leaves are wilted and vibrant. Pour in the heavy cream (or coconut milk) for a silky, creamy finish, mixing well.
  7. Stir in the grated parmesan cheese until it melts and blends into the warm soup.
  8. Taste and adjust with salt and pepper as needed before serving warm, ensuring each bowl is full of flavor.
