Description

A delicious and creamy Butter Brickle Ice Cream made with caramelized toffee bits and a rich, buttery flavor.


Ingredients

Scale
  • 2 tablespoons salted butter
  • 1/4 cup light brown sugar
  • 1/4 cup heavy cream
  • 1.5 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup light brown sugar
  • 1/2 tablespoon vanilla extract
  • A pinch of salt
  • 1 cup chopped homemade toffee or Heath Bar toffee bits

Instructions

  1. Ensure your ice cream insert is frozen as per the manufacturer’s instructions for 24 hours.
  2. In a medium saucepan over medium heat, melt the butter, then add the brown sugar, heavy cream, and a pinch of salt. Stir until the sugar dissolves. Simmer for 2-4 minutes until thickened, then stir in vanilla and let cool.
  3. In a large mixing bowl, whisk together the heavy cream, whole milk, remaining light brown sugar, and vanilla. Chill in the freezer for 15 minutes.
  4. Combine the cooled toffee sauce with the chilled cream mixture and chill again for another 15 minutes.
  5. Pour the mixture into the ice cream maker and churn according to the manufacturer’s instructions, about 15-20 minutes.
  6. Layer 1/3 of the soft ice cream in a freezer-safe container, sprinkle with the toffee bits, and swirl. Repeat with the remaining ice cream.
  7. Cover and freeze for 3-5 hours until firm.
  8. Serve and enjoy!
