A delicious and creamy Butter Brickle Ice Cream made with caramelized toffee bits and a rich, buttery flavor.
Ingredients

- 2 tablespoons salted butter
- 1/4 cup light brown sugar
- 1/4 cup heavy cream
- 1.5 cups heavy cream
- 1 cup whole milk
- 3/4 cup light brown sugar
- 1/2 tablespoon vanilla extract
- A pinch of salt
- 1 cup chopped homemade toffee or Heath Bar toffee bits
Instructions
- Ensure your ice cream insert is frozen as per the manufacturer’s instructions for 24 hours.
- In a medium saucepan over medium heat, melt the butter, then add the brown sugar, heavy cream, and a pinch of salt. Stir until the sugar dissolves. Simmer for 2-4 minutes until thickened, then stir in vanilla and let cool.
- In a large mixing bowl, whisk together the heavy cream, whole milk, remaining light brown sugar, and vanilla. Chill in the freezer for 15 minutes.
- Combine the cooled toffee sauce with the chilled cream mixture and chill again for another 15 minutes.
- Pour the mixture into the ice cream maker and churn according to the manufacturer’s instructions, about 15-20 minutes.
- Layer 1/3 of the soft ice cream in a freezer-safe container, sprinkle with the toffee bits, and swirl. Repeat with the remaining ice cream.
- Cover and freeze for 3-5 hours until firm.
- Serve and enjoy!
