Decadent Brown Butter Pistachio Chocolate Chip Cookies Bliss


Ingredients

  • 10 tablespoons unsalted butter
  • ½ cup dark brown sugar
  • ½ cup white sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups all purpose flour
  • 2 ½ cups semi-sweet chocolate chips
  • 1 cup unsalted pistachios
  • ½ cup pistachio cream or spread
  • Optional: Flakey salt

Instructions

  1. Preheat your oven to 350°F. Line 2 baking sheets with parchment paper.
  2. Melt the butter in a saucepan over medium heat until it turns amber and smells nutty, about 5-7 minutes, then cool for 10-15 minutes.
  3. Scoop 10 small dollops of pistachio cream onto a sheet pan and freeze for 10 minutes.
  4. Mix the cooled brown butter with dark brown sugar and white sugar, whisking until combined.
  5. Add the whole egg and yolk, whisk, then add vanilla and mix until incorporated.
  6. Combine flour, baking soda, baking powder, salt, chocolate chips, and chopped pistachios in a bowl, then fold into the wet mixture.
  7. Scoop dough, flatten slightly, place a frozen pistachio cream dollop in the center, and wrap the dough around it.
  8. Bake for 8-9 minutes until lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

  • For extra flavor, sprinkle flakey salt on top before baking.
