  • 4 Tart apples (like Granny Smith or Boskoop)
  • 100g Marzipan
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Cloves
  • 100g Unsalted butter
  • 200g All-purpose flour
  • 200ml Non-alcoholic apple cider
  • 3 Eggs (or flaxseed meal mixed with water as a vegan alternative)
  • 50g Honey or maple syrup
  • 150g Powdered sugar
  • 1 tsp Vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). Core the apples, leaving the bottom intact, and place them in a baking dish.
  2. Stuff each apple with a mix of chopped marzipan, cinnamon, nutmeg, and a drizzle of honey or maple syrup. Bake for about 20-25 minutes until tender but not mushy. Let them cool.
  3. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the eggs (or flaxseed mixture) one at a time, mixing well after each addition.
  4. Slowly incorporate the flour, baking powder, and spices until just combined. Gradually mix in the non-alcoholic apple cider until the batter is smooth.
  5. Grease and line a round cake pan with parchment paper. Pour half of the cake batter into the pan, then carefully place the baked apples on top, spacing them evenly.
  6. Pour the remaining batter over the apples, ensuring they are well-covered. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
