- 200g All-purpose flour
- 200ml Non-alcoholic apple cider
- 3 Eggs (or flaxseed meal mixed with water as a vegan alternative)
- 50g Honey or maple syrup
- 150g Powdered sugar
- 1 tsp Vanilla extract
Instructions
- Preheat your oven to 180°C (350°F). Core the apples, leaving the bottom intact, and place them in a baking dish.
- Stuff each apple with a mix of chopped marzipan, cinnamon, nutmeg, and a drizzle of honey or maple syrup. Bake for about 20-25 minutes until tender but not mushy. Let them cool.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the eggs (or flaxseed mixture) one at a time, mixing well after each addition.
- Slowly incorporate the flour, baking powder, and spices until just combined. Gradually mix in the non-alcoholic apple cider until the batter is smooth.
- Grease and line a round cake pan with parchment paper. Pour half of the cake batter into the pan, then carefully place the baked apples on top, spacing them evenly.
- Pour the remaining batter over the apples, ensuring they are well-covered. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
