Description

Deliciously soft and chewy cookies bursting with fresh blueberry flavor, perfect for a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Zest of one lemon
  • 1 1/2 cups fresh blueberries
  • Optional: 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar together until fluffy.
  4. Add the egg, vanilla extract, and lemon zest, and stir until smooth.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Gently fold in the blueberries.
  7. Drop spoonfuls of dough onto the baking sheets, spacing them about 2 inches apart.
  8. Bake for 12 minutes until lightly golden.
  9. Cool on wire racks before serving.

Notes

Cookies are best enjoyed fresh but can be stored in an airtight container. Frozen cookie dough can be baked straight from the freezer.
