- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- Zest of one lemon
- 1 1/2 cups fresh blueberries
- Optional: 1/4 teaspoon almond extract
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the butter and sugar together until fluffy.
- Add the egg, vanilla extract, and lemon zest, and stir until smooth.
- Gradually mix the dry ingredients into the wet ingredients.
- Gently fold in the blueberries.
- Drop spoonfuls of dough onto the baking sheets, spacing them about 2 inches apart.
- Bake for 12 minutes until lightly golden.
- Cool on wire racks before serving.
Notes
Cookies are best enjoyed fresh but can be stored in an airtight container. Frozen cookie dough can be baked straight from the freezer.
