Blackberry Goat Cheese Puff Pastry Twists That Wow Every Time

- 1 package Puff Pastry (Thawed)
- 1 large Egg (For egg wash)
- 2 cups Blackberries (Fresh or seasonal berries)
- 2 tablespoons Water
- 1/2 cup Lemon Juice (Freshly squeezed)
- 1/4 cup Sugar (Adjust based on berry tartness)
- 4 ounces Goat Cheese (Crumble on top)
- 1 tablespoon Lemon Zest
- 2 tablespoons Raw Sugar (You can use granulated sugar)
- 1 teaspoon Fresh Thyme (Or rosemary if preferred)
Instructions
- In a medium saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened and jam-like.
- Thaw puff pastry for 20-25 minutes and roll out to 1/8 inch thick on a lightly floured surface.
- Spread half of the cooled blackberry jam on one half of the pastry, crumble goat cheese over it, and sprinkle with lemon zest. Fold and cut into 12 strips.
- Gently twist each strip and place on a parchment-lined baking sheet, ensuring space between them.
- Preheat oven to 400°F (200°C). Brush twists with whisked egg and sprinkle the sugar-thyme mixture on top. Bake for 16-18 minutes until golden.
- Cool the twists on a wire rack for about 5 minutes before serving warm.
