Today, I’m going to take you on a delightful culinary adventure with a recipe that’s not only mouthwatering but also super easy to whip up—Blackberry Balsamic and Brie Grilled Cheese!

  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar (adjust to your taste!)
  • 2 tbsp lemon juice
  • Kosher salt, to taste
  • 300 g double cream brie cheese
  • 1 tbsp chopped fresh thyme
  • 8 slices sourdough bread
  • Butter, as needed for frying

Instructions

  1. Make the Jam: Start by making your fabulous blackberry balsamic jam! In a saucepan over medium-high heat, combine those juicy blackberries, balsamic vinegar, sugar, lemon juice, and just a pinch of kosher salt. Bring this mix to a boil, and then lower the heat. Let it simmer while you grab a wooden spoon (or potato masher) to mash up the berries a bit. In about 7 to 10 minutes, you’ll have a glossy, thick jam that smells like heaven! Pour it into a small bowl and let it cool while we focus on the cheese delight.
  2. Prepare the Brie: Slice that creamy brie into half-inch thick pieces. You want enough to get that gooey goodness in every bite!
  3. Sourdough Sandwich Assembly: Heat a skillet over medium heat. Spread butter on one side of four slices of sourdough bread. You’ll place these buttered sides down in the pan. Top each one generously with brie slices. Fry until the bread is crispy and golden, and the brie starts to melt—heavenly!
  4. Add the Thyme: Don’t forget to sprinkle some chopped fresh thyme over the cheese while it’s cooking for that extra pop of flavor.
  5. Layer the Jam: On the remaining four slices, spread a thick layer of your homemade blackberry jam, and place them jam side down over the melted brie bliss.
  6. Final Fry and Serve: Butter the top side of the sandwiches before carefully flipping them over. Fry until the second side is golden brown and the brie is melty.
