Irresistible Black Forest Crepes with Cherry Delight
Ingredients

- 1 cup plain flour
- 1 cup milk (or almond milk)
- 2 tbsp melted butter (or coconut oil)
- 2 tbsp sugar (brown sugar for richer taste)
- 1 tbsp cocoa powder (for chocolate flavor)
- 2 large eggs (or flax eggs for vegan option)
- 50 g melted chocolate (dark chocolate recommended)
- 1 pinch salt
- 2 cups fresh cherries (or frozen cherries)
- 1 cup sugar (for syrup)
- 1/2 cup water (or kirsch for added flavor)
- 1 cup double cream (whipped)
- 1 tbsp icing sugar (for dusting)
Instructions
- In a mixing bowl, whisk together the flour, cocoa powder, and a pinch of salt.
- In a separate bowl, blend the eggs, milk, melted butter, and melted chocolate until smooth.
- Gradually add the dry blend to the wet mixture, mixing gently to avoid lumps.
- Preheat a skillet over medium heat, adding a bit of oil or butter.
- Pour enough batter into the pan to cover the bottom; cook until edges lift, then flip.
- Continue until all batter is used, stacking crepes on a plate and covering with a towel.
- Remove pits from fresh cherries and place them in a saucepan with sugar and water.
- Cook over medium heat, smashing cherries slightly and stirring until thickened.
- Strain the mixture through a sieve to separate the syrup.
- Whip the double cream until stiff peaks form.
- To assemble, take a crepe, add whipped cream, sprinkle with cherry pieces, and drizzle with syrup.
- Dust with icing sugar and top with whole fresh cherries.
Notes
- Use dark chocolate for a richer flavor.
- Frozen cherries can be used if fresh ones are unavailable.
