Irresistible Black Forest Crepes with Cherry Delight


Ingredients

  • 1 cup plain flour
  • 1 cup milk (or almond milk)
  • 2 tbsp melted butter (or coconut oil)
  • 2 tbsp sugar (brown sugar for richer taste)
  • 1 tbsp cocoa powder (for chocolate flavor)
  • 2 large eggs (or flax eggs for vegan option)
  • 50 g melted chocolate (dark chocolate recommended)
  • 1 pinch salt
  • 2 cups fresh cherries (or frozen cherries)
  • 1 cup sugar (for syrup)
  • 1/2 cup water (or kirsch for added flavor)
  • 1 cup double cream (whipped)
  • 1 tbsp icing sugar (for dusting)

Instructions

  1. In a mixing bowl, whisk together the flour, cocoa powder, and a pinch of salt.
  2. In a separate bowl, blend the eggs, milk, melted butter, and melted chocolate until smooth.
  3. Gradually add the dry blend to the wet mixture, mixing gently to avoid lumps.
  4. Preheat a skillet over medium heat, adding a bit of oil or butter.
  5. Pour enough batter into the pan to cover the bottom; cook until edges lift, then flip.
  6. Continue until all batter is used, stacking crepes on a plate and covering with a towel.
  7. Remove pits from fresh cherries and place them in a saucepan with sugar and water.
  8. Cook over medium heat, smashing cherries slightly and stirring until thickened.
  9. Strain the mixture through a sieve to separate the syrup.
  10. Whip the double cream until stiff peaks form.
  11. To assemble, take a crepe, add whipped cream, sprinkle with cherry pieces, and drizzle with syrup.
  12. Dust with icing sugar and top with whole fresh cherries.

Notes

  • Use dark chocolate for a richer flavor.
  • Frozen cherries can be used if fresh ones are unavailable.
