- 1 cup chocolate cookies, crushed
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup cherry pie filling
- 2 oz dark chocolate, shavings for garnish
- Cherries for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the crushed chocolate cookies and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
- In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the cream cheese mixture over the prepared crust and smooth the top.
- Bake in the preheated oven for 50-60 minutes until set. (It may have a slight wobble in the center.)
- Once removed from the oven, allow the cheesecake to cool completely in the pan on a wire rack.
- Chill in the refrigerator for at least 4 hours before serving.
- Top with cherry pie filling, dark chocolate shavings, and fresh cherries before serving.
Notes
For a dairy-free version, substitute with vegan cream cheese and coconut cream. Ensure all ingredients are at room temperature for best results.
