Description

Hey there, lovely cooks! Are you ready to take your weeknight dinners from drab to fab with just one delicious recipe? Well, buckle up because this Beef Fried Rice is about to become your new best friend in the kitchen! It’s quick, it’s flavorful, and it’s the perfect solution for those busy evenings when you want something satisfying but don’t have hours to spare.

Ingredients

Scale
  • 2 cups cooked rice (preferably day-old and chilled)
  • 1/2 lb beef steak (sirloin or flank, thinly sliced)
  • 2 tbsp soy sauce (divided)
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil (divided)
  • 3 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 cup frozen peas and carrots (thawed)
  • 2 eggs (lightly beaten)
  • 2 green onions (sliced)
  • 2 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and black pepper to taste

Instructions

  1. Marinate the Beef: Fisrt, grab a small bowl and toss in those tender beef strips with 1 tbsp of soy sauce and cornstarch. Give it a few gentle stirs and let it marinate for 10-15 minutes. Your beef will be thanking you later for it!
  2. Cook the Beef: Then heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Toss in that marinated beef and stir-fry until it’s browned and cooked through, around 2-3 minutes. Remove it from the pan and set aside. It’s superhero time for your beef, but don’t worry, it’ll be back!
  3. Sauté the Veggies: After that, In the same skillet, add the remaining 1 tbsp of vegetable oil. Sauté the minced garlic and diced onion until they’re fragrant and translucent. Your kitchen will smell incredible—seriously, it’s like food perfume! Next, throw in the peas and carrots, stir-frying for an additional 2-3 minutes until they’re nice and heated through.
  4. Scramble the Eggs: Now, push those veggies to one side of the skillet, and pour the beaten eggs into the empty side. Scramble them until they’re just set. You’re building layers of flavor, and it’s looking fantastic!
  5. Combine Ingredients: Then, it’s time to bring it all together! Add the cooked rice to your skillet, breaking up any clumps with a spatula. Then, return the beef to the skillet and mix in the remaining 1 tbsp of soy sauce, oyster sauce (if you’re feeling fancy), and sesame oil. Toss everything together like it’s a dance party until it’s evenly coated and heated through.
  6. Finish and Garnish: Taste your masterpiece and adjust the seasoning with salt and black pepper if needed. Finally, toss in those lovely green onions for a burst of freshness.
  7. Serve and Enjoy: To finish, dish up your Beef Fried Rice hot! Feel free to garnish with extra green onions if you want to impress your guests (or just make it look extra nice for Instagram). Your hearty, flavorful meal is ready to be devoured.

Notes

  • Don’t have day-old rice? No problem! Spread freshly cooked rice on a baking sheet and let it cool in the fridge for about 30 minutes to dry out a bit—that way, it won’t get mushy.
  • If you’re feeling adventurous, add a splash of sriracha or chili flakes for a little heat. Your taste buds will thank you!
