- 8 oz spaghetti or your favorite pasta
- 1 lb shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha (adjust to your spice preference)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
- Sauté the Shrimp: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add minced garlic and sauté for 30 seconds. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- Make the Bang Bang Sauce: In the same skillet, mix mayonnaise, sweet chili sauce, and sriracha. Adjust the spice level to taste, adding reserved pasta water if needed to thin.
- Combine Everything: Add cooked pasta to the skillet with the sauce, tossing to coat. If too thick, add more reserved pasta water and toss shrimp back in.
- Serve and Garnish: Serve in bowls, sprinkle with chopped green onions, and add extra sriracha if desired.
Notes
Feel free to add veggies like bell peppers or broccoli; they add nutrients and color. Great for meal prep—store components separately.
