Ingredients

  • 1 cup semolina (suji)
  • 1 cup yogurt
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Chopped nuts and dry fruits (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F). If you’re using a steamer, get it ready with water.
  2. In a mixing bowl, combine semolina, yogurt, and sugar. Mix well and let it sit for 15-20 minutes.
  3. Add milk and oil to the mixture and stir until well combined.
  4. In a separate bowl, mix baking soda, baking powder, and salt. Add this to the batter and mix well.
  5. If you’d like, fold in some chopped nuts and dry fruits for extra flavor.
  6. Pour the batter into a greased baking pan.
  7. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow it to cool before slicing and serving.

Notes

To keep your cake fresh, store it in an airtight container at room temperature. It should stay good for about 3-4 days. If you want to keep it longer, you can refrigerate it for up to a week.
