A delicious recipe for cajun chicken thighs baked with colorful bell peppers.
Ingredients

- 2–3 tablespoons cajun seasoning
- 2 teaspoons garlic powder
- 2 teaspoons smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 6 bone in skin on chicken thighs
- 2 tablespoons olive oil
- 1 cup red bell pepper (sliced)
- 1 cup yellow bell pepper (sliced)
- 1 cup green bell pepper (sliced)
- 1 small white onion (sliced)
- 3 cloves garlic (minced)
- 4 tablespoons butter (cut into slices)
Instructions
- Preheat the oven to 400 degrees.
- In a small bowl mix the cajun seasoning, garlic powder, smoked paprika, salt, black pepper and red pepper flakes until combined.
- Place your chicken thigh on a cutting board and pat dry with paper towels. Rub olive oil over both sides of the chicken thighs. Evenly sprinkle the seasoning onto both sides of the chicken and try and get some under the skin.
- In an oven safe skillet or 9×13 baking dish add the bell peppers, onions and garlic.
- Place the seasoned chicken thighs on top of the peppers and onions. Add the butter pieces on top.
- Bake uncovered for 30-35 minutes, or until internal temperature reaches 165 degrees.
