Instructions
- Whisk pudding mix with cold milk until smooth and thick, about 2 minutes.
- Stir in mint or vanilla extract, then add green food coloring until desired hue is reached.
- Gently fold in whipped topping until smooth and fluffy.
- Spread the mixture evenly into the pie crust.
- Refrigerate for at least 4 hours, or overnight, to set.
- Top with more whipped cream, red hearts, or festive sprinkles before serving.
