- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract (optional)
- 1 cup whipped cream
- ½ cup chocolate chips (optional)
- Sprinkles or crushed candy canes for topping
Instructions
- In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a lined 9×9 inch baking dish. Use the back of a spoon to make it even.
- In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and peppermint extract (if using). Mix until well combined.
- Gently fold in the whipped cream until the mixture is light and fluffy.
- Pour the cream cheese mixture over the crust in the baking dish. Spread it evenly with a spatula.
- Cover the dish and refrigerate for at least 2 hours or until set.
- Once chilled, remove from the refrigerator and cut into small squares or bites.
