Description
A delicious breakfast sandwich made with a bacon weave.
Ingredients

- For the Bacon Weave:
- 12 slices of bacon
- For the Sandwich Filling:
- 4 large eggs
- 1/4 cup milk
- Salt and pepper (to taste)
- 1 cup shredded cheese (cheddar, American, or your choice)
- Optional toppings: sliced avocado, tomato, spinach, or hot sauce
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
- Lay 6 slices of bacon side by side on the baking sheet, slightly overlapping them. Take the remaining 6 slices and weave them over and under the first layer to create a lattice pattern. Trim any excess bacon if needed.
- Bake for 15–20 minutes, or until the bacon is crispy. Remove from the oven and let cool slightly.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a non-stick skillet over medium heat, pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and cooked through. Remove from heat.
- Place half of the bacon weave on a plate. Top with the scrambled eggs and sprinkle with shredded cheese. Add any optional toppings you like.
- Place the remaining half of the bacon weave on top to complete the sandwich.
- Cut the sandwich into halves or quarters and serve warm. Enjoy.
