Description

A delicious breakfast sandwich made with a bacon weave.


Ingredients

Scale
  • For the Bacon Weave:
    • 12 slices of bacon
  • For the Sandwich Filling:
    • 4 large eggs
    • 1/4 cup milk
    • Salt and pepper (to taste)
    • 1 cup shredded cheese (cheddar, American, or your choice)
    • Optional toppings: sliced avocado, tomato, spinach, or hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Lay 6 slices of bacon side by side on the baking sheet, slightly overlapping them. Take the remaining 6 slices and weave them over and under the first layer to create a lattice pattern. Trim any excess bacon if needed.
  3. Bake for 15–20 minutes, or until the bacon is crispy. Remove from the oven and let cool slightly.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. In a non-stick skillet over medium heat, pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and cooked through. Remove from heat.
  6. Place half of the bacon weave on a plate. Top with the scrambled eggs and sprinkle with shredded cheese. Add any optional toppings you like.
  7. Place the remaining half of the bacon weave on top to complete the sandwich.
  8. Cut the sandwich into halves or quarters and serve warm. Enjoy.
