Description

A quick, healthy, and delicious avocado chicken salad that’s perfect for lunch or dinner.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 ripe avocado, mashed
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, mash avocado with a fork until creamy.
  2. Stir in Greek yogurt, lime juice, garlic powder, onion powder, salt, and pepper.
  3. Add shredded chicken and mix well.
  4. Fold in red onion, celery, cherry tomatoes, and fresh herbs.
  5. Drizzle with olive oil and mix gently.
  6. Serve immediately or refrigerate for 30 minutes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Use cold chicken for a perfect blend.
