Ingredients

  • 1 kg Chicken (Substitute with boneless chicken for faster cooking)
  • 1 teaspoon Salt (Sea salt offers a more elevated taste)
  • 1 teaspoon Black Pepper (White pepper can provide a subtler flavor)
  • 1 teaspoon Paprika (Smoked paprika can add depth)
  • 1 tablespoon Curry Powder (Garam masala is an excellent alternative)
  • 1 teaspoon Thyme (Omit for gluten-free or use Italian seasoning)
  • 1 medium Onion (Shallots can be a sweeter alternative)
  • 4 tablespoons Vegetable Oil (Olive oil is a healthier choice)
  • 4 medium Roma Tomatoes (Canned tomatoes can be used if fresh aren’t available)
  • 1 medium Red Bell Pepper (Green bell pepper can also work)
  • 2 pieces Scotch Bonnet Peppers (Substitute with habaneros)
  • 2 tablespoons Tomato Paste (Essential for richness)
  • 1 teaspoon Garlic Powder (Fresh garlic can enhance flavor further)
  • 1 teaspoon Ginger Powder (Fresh ginger offers a brighter kick)
  • 1 piece Bouillon Cube (Can replace with broth for a milder taste)
  • 2 tablespoons Parsley or Cilantro (For garnish)
  • 1 Lime or Scallions (optional) (Lemon is a good substitute)

Instructions

  1. In a large bowl, mix the chicken with salt, black pepper, paprika, curry powder, thyme, and diced onion. Let it marinate for at least 30 minutes to absorb the flavors.
  2. In a skillet over medium-high heat, add vegetable oil. Once hot, carefully place the marinated chicken in the skillet and brown it on all sides until golden, around 5-7 minutes. Remove and set aside.
  3. In a blender, combine Roma tomatoes, red bell pepper, chopped onion, and Scotch bonnet peppers. Blend until you achieve a smooth sauce.
  4. In the same skillet, lower the heat and add the tomato paste, frying it for about 2 minutes.
  5. Pour the blended sauce into the skillet and allow it to simmer for about 10 minutes until thickened, stirring occasionally.
  6. Stir in garlic powder, ginger powder, and a bouillon cube, adjusting seasoning as needed.
  7. Return the browned chicken to the skillet, cover, and reduce the heat to low, letting it simmer for 25-30 minutes.
  8. Once ready, remove from heat and garnish with fresh parsley or cilantro. Serve hot.
