Ingredients

- 1 whole chicken (about 4 to 5 pounds)
- 2 apples, cored and sliced (Honeycrisp, Gala, or Pink Lady)
- 1 to 1.5 cups fresh cranberries (frozen works too)
- 1 onion, sliced
- 3 to 4 cloves garlic, smashed
- 2 tablespoons olive oil or melted butter
- Salt and black pepper
- 1 teaspoon dried thyme (or rosemary)
- 1 teaspoon cinnamon (optional)
- 1 cup chicken broth or apple cider
Instructions
- Heat your oven to 425 F. Pat the chicken dry with paper towels.
- Rub the chicken with olive oil or butter, then season it generously with salt, pepper, and thyme.
- Scatter the onion, apples, cranberries, and garlic in the bottom of a roasting pan.
- Pour in the broth or apple cider.
- Set the chicken on top and roast for about 60 to 75 minutes.
- Let it rest for 10 to 15 minutes before carving.
Notes
Use a thermometer to ensure the thickest part of the thigh reaches 165 F for best results.
